Serve in a Coupe glass

Ingredients:
1 12 oz Hayman's Sloe Gin
23 oz Lemon juice (freshly squeezed)
13 oz Monin Almond (Orgeat) Syrup
14 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Egg white replacement (vegan)
1 23 oz Brut champagne/sparkling wine
× 1 1 serving

Garnish: 5 drops aromatic bitters (preferably Sexy Bitters) dropped onto surface of cocktail

How to make:

DRY SHAKE first 4 ingredients (without ice) Add ice, SHAKE again and fine strain into chilled glass. TOP with sparkling wine.

I added egg white to the original recipe to ensure a foamy head to receive and hold the all-important bitters.

History:

Adapted from a recipe created in 2021 by Aljosha Moretti at Le Lion Bar de Paris in Hamburg, Germany where it remains one of the bestselling cocktails. Originally based on Rutte Sloe Gin.

Joerg Meyer, the man behind Le Lion Bar de Paris gave us some background information; "A German bartender, Klaus Stephan Rainer from Goldene Bar in Munich, created a "aromatic style" Cocktail Bitter, called Sexy Bitters. I asked Team Le Lion in 2019 to create drinks, featuring this Cocktail Bitters, cause we liked to support our local "underground".

Aljosha Moretti came up with the Sloe & Sexy- a sloe gin and champagne drink featuring Sexy Bitters. And I knew from the second that this creation will become a banger. Champagne cocktail, cool name, accessible and charming taste. So we put it on the menu. If you do not have Sexy Bitters at hand (quite German product) - Change to and Aromatic Bitters. Sey Bitters has a hint of Cinnamon and Tonka Bean shining true.

I had it at the Le Lion in Hamburg and it made me buy sloe gin immediately. But I learned that the perfect balance of the drink is not easy to achieved. The sloe gin needs to be rather Dry and the quality of the orgeat is crucial as well. And finally everything has to adapted to the sweetness of the Champagne/Sparkling wine
challenging but rewarding drink
