Ingredients:
1 13 oz Tennessee whiskey
23 oz Lustau Jarana Fino Sherry
23 oz Monin Pineapple Syrup
13 oz Lemon juice (freshly squeezed)
2 dash Orange Bitters by Angostura
× 1 1 serving

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of charred baby corn or corn segment.
  3. SHAKE all ingredients with ice.
  4. STRAIN into glass filled with crushed ice.
  5. Garnish with charred baby corn or corn segment. (The aroma from the charred corn is a key element of this cocktail.)

Looking at the ingredients, you may think this cocktail is sweet, but as Cam Dawson, its creator, says, "the sherry really balances it!" Pineapple combines brilliantly with the whiskey and fino sherry.

History:

Adapted from a recipe created in 2023 by Cam Dawson, the longstanding UK Jack Daniel's ambassador.

"This was created to be a Whiskey cocktail for those who say they don't like Whiskey cocktails!!! Focusing on the tropical fruit notes within Jack Daniel's, you can pick on, of course... 'Banana' and that works so well with Pineapple. With its golden flavours (and Spanish Sherry), it made me think of 'GOLD', and the name comes from the ONLY river in Tennessee that was historically used for gold panning."

I expected it to be sweeter, but pineapple mostly adds another layer of acidity on top of lemon. Fino is certainly the backbone of the cocktail. After a couple of sips I added a dash of pineapple syrup. My mistake, that completely changed the flavour.
