Ingredients:
1 12 oz Del Maguey Vida Clásico Mezcal
12 oz Lustau Jarana Fino Sherry
1 12 oz Coconut water
112 oz Gomme syrup
2 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of float dried coconut.
  3. STIR all ingredients with ice.
  4. FINE STRAIN into chilled glass.

History:

Named after Dónde Estás, Yolanda by Pink Martini. (Dónde Estás, Yolanda is Spanish for 'where are you, Yolanda'.) Created in January 2024 by yours truly at the Clocktower, Rye, England. (I was going to call this cocktail simply Yolanda but then I remembered the Yolanda cocktail in Harry Craddock's 1930 The Savoy Cocktail Book. The best names have already been used!)
