Prepare

Select and pre-chill a COUPE GLASS.

Prepare garnish of lemon zest twist.

Method

STIR all ingredients with ice.

FINE STRAIN into chilled glass.

Garnish

EXPRESS lemon zest twist over the cocktail and use as garnish.

I love this website because I can put in random ingredients and come up with intriguing drinks. I used Fenando de Castillo Fino and Fenando de Castillo Blanco Vermouth and continuing the Spanish theme, Larios Mediterraneo gin. I loved this. Utterly delicious, dangerously so given the strength of it! Used Four pillars navy strength and cut it back by a third as was not my first cocktail of the evening and feeling intimidated by the 58.8%! The savoury notes of the four pillars worked brilliantly.

Retried with Four Pillars Rare Dry. The navy strength gin does indeed make a difference here. Still super delicious though.

Fresh bottles of Sherry and vermouth are essential here, to allow the finer notes to breathe.

Nutty & toffee notes indeed :)
Had to sub Lustau's Don Nuno Oloroso because no fino on hand & Carpano Bianco. Used Cote Des Saints a navy strength gin from Quebec (it's v. nice).
Though I had to sub all the recommended ingredients for as close as I could get using what I have, I would make this cocktail again in a heartbeat. Excellent!
