Serve in a Coupe glass

Ingredients:
45 ml Hayman's Old Tom Gin
10 ml Lustau Oloroso Don Nuño Sherry
20 ml Lemon juice (freshly squeezed)
20 ml Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative
2 barspoon Apricot jam (preserve)
1 barspoon Balsamic vinegar of Modena
10 ml Extra virgin olive oil
