Serve in a Coupe glass

Ingredients:
37.5 ml Hayman's London Dry Gin
15 ml Lustau Amontillado Los Arcos Sherry
15 ml Christian Drouin VSOP Calvados Pays d'Auge
30 ml Lemon juice (freshly squeezed)
22.5 ml Sugar syrup 'simple' (1 sugar to 1 water, 48°Brix)
30 ml Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Egg white replacement (vegan)
30 ml Albariño wine
