Serve in a Nick & Nora glass

Ingredients:
45 ml Hayman's Old Tom Gin
25 ml Lustau Oloroso Don Nuño Sherry
10 ml Campari Bitter liqueur
10 ml Balsamic vinegar of Modena
7.5 ml Demerara/Muscovado/brown sugar syrup (1 sugar : 1 water)
1 gram Fresh thyme
1 twist Lemon peel
