Ingredients:
1 12 oz Hayman's London Dry Gin
1 12 barspoon Raspberry jam
12 oz Strucchi Dry Vermouth
34 oz Lemon juice (freshly squeezed)
13 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lemon zest twist and skewered raspberry.
  3. Add other ingredients, SHAKE with ice and strain back into shaker.
  4. DRY SHAKE (without ice) to emulsify.
  5. FINE STRAIN into chilled glass.
  6. Express lemon zest twist over the cocktail and discard.
  7. Garnish with skewered raspberry.

Variant:

Substitute gin for vodka or tequila. Different flavours of jam may also be used - blackberry works well.

In an effort to find a cocktail that mum (uninitiated cocktail drinker) and Mr H. (picky) Would both like - I settled on this! Used 2/3 of lemon and added a bit of sugar syrup and they were both happy😅

My second egg white cocktail of the evening. I used seedless raspberry jam. Perfect. I’ll use slightly more next time, and slightly less lemon juice. Didn’t have a fresh raspberry so I used a Luxardo cherry. I think I’ll enjoy this one more in the summer. (It’s Xmas eve as I type this)

Needs care with lemon juice depending on how sour yours are. I’ll reduce next time.
I’ve tried with a few different jam/preserve variations, but think I prefer the wonderful redolence of the fresh raspberry version, when they are in season.

Also good with 1oz London Dry and 0.5oz raspberry gin. Agree with the comment about fine straining, even with a seedless jam.

Outstanding Used an organic raspberry jam. Was a bit concerned it would be sweet, but it is nicely dry. The gin is prominent. On my favourites. Will definitely have again.

I didn't have raspberry jam so I used Illawarra plum jam, and it was very nice. I might make it again with cognac.

It's Monday afternoon and I've just finished watching Drinks Master on Netflix and was inspired to come here whilst watching Julie Reiner make this drink. I was feeling creative after binging the series, so did my own take using Cassis jam, tequila, vermouth, raspberry liquor and aquafaba. The sea salt in the juice from the tin of cannellini beans made the drink so much more complex than I expected! I garnished it with fresh black pepper. Yum yum

Didn't have raspberry so used plum jam instead. A nice sour but lemon heavy.
