Serve in a Coupe glass

Ingredients:
34 oz Italicus liqueur
34 oz Rhum Clément Blanc
34 oz Light gold rum (1-3 year old molasses column)
12 oz Lime juice (freshly squeezed)
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
6 drop Difford's Daiquiri Bitters
13 oz Chilled water omit if using wet ice

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lime wedge.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with lime wedge.

Your choice and alcohol strength of rhum and rum and will dramatically affect this finally balanced and delicious cocktail, along with Martinique rhum it seems fitting to use a lightly aged Cuban rum, if you have access to one.

History:

Adapted from the Italicus Daiquiri created by Julio Cabrera at his Cafe La Trova in Miami, USA. Julio's son, Andy Cabrera, made his father's delicious Daiquiri for me after the Art of Italius Aperitivo Challenge in May 2024 with Rome's famous Colosseum as a backdrop.

The italicus gives a nice floral lift to the rum

A very good surprise. First time i made it with Clement Bleu canne rhum and Havana 3 years and it was etxraodinary. With a Pere Labat 59%, it's even better.

Made this with madeiran Branca rum agricola (aguardente de cana), Havana club 3yo, and peychauds bitters which gave it a nice slight pink hue. Really enjoyed it, I do like a bit of agicultural rum and I love italicus.
