Serve in an Old-fashioned glass

Ingredients:
1 oz Hayman's Sloe Gin
1 oz Hayman's London Dry Gin
1 oz Pink grapefruit juice (freshly squeezed)
14 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Heering Cherry Liqueur

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of grapefruit slice.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass filled with crushed ice.
  5. Garnish with grapefruit slice wheel.

Created in April 2011 by Matt Donnelly at the Bacchus Pub and Kitchen, London. To quote Matt, "The drink is called a 'Gamble' due to the fact I gambled on changing 'The Bramble'."

If you are a fan of Sloe gin, then this cocktail is for you. The Sloe gin is very upfront and then the grapefruit comes in at the end. For my palate, it is borderline on the sweet side, since Sloe gin and the Cherry Heering both tend to be sweet, I re-made it without the rich syrup and it was more balanced and enjoyable for my taste.
