1 2/3 fl oz Del Maguey Vida Clásico Mezcal
3/4 fl oz Lemon juice (freshly squeezed)
3/4 fl oz Orange juice (freshly squeezed)
1/2 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
1/2 fl oz Egg white (pasteurised) or Fee Brothers Fee Foam cocktail foamer
2 dash Orange Bitters by Angostura
3 drop Saline solution (20g sea salt to 80g water) or merest pinch of s

How to make

Prepare

  1. Select and pre-chill a TODDY GLASS.
  2. RIM glass with Tajín seasoning (moisten outside edge with lime or orange juice and drip into Tajín).
  3. Prepare garnish of coin-sized orange zest twist.

Method

  1. SHAKE all ingredients with ice and strain back into shaker.
  2. DRY SHAKE (without ice) to emulsify.
  3. FINE STRAIN into chilled glass.

Garnish

  1. EXPRESS orange zest twist over cocktail and float as garnish.

Wonderful. This seems like a cocktail for those who are still unsure about mezcal: the citrus and "sour" approach mellows the spirit and allows you to enjoy the smokiness without being overwhelmed.

Anyone else love it as is, but considerably more with a muddled jalapeno? 2-3 full droppers of Bittermans Hellfire shrub would be great in this.

Our favourite Stone Sour by a country mile. Sometimes, as keen gardeners, we add just a couple of drops of celery bitters for extra 'earthiness'.

This one needed time - first impressions were not sure - I like my sours and this wasn't a sour as I expected. However, it did grow on me. The orange subdued the Mezcal to a certain extent and then, to my tastes, seemed to give it a slightly spicy back taste.
