Ingredients:
1 12 oz Rémy Martin V.S.O.P. cognac
56 oz Belle de Brillet pear liqueur
12 oz Lemon juice (freshly squeezed)
3 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill a Nick & Nora glass.
  2. Prepare garnish of orange zest twist (to add the classic orange element to this sidecar). Optionally, before service, prepare the glass with an orange juice-moistened rim dipped in sugar and left to dry and crust before placing it in a freezer to chill to serving temperature..
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.

Tried this without the sugared rim. It probably needed it, slightly too tart and the pear notes were quite subdued

i agree with everything about this. i was ready for more pear but maybe you're right about the rim bringing it out. well done tim fitch.
