Ingredients:
1 oz Belle de Brillet pear liqueur
4 12 oz Dry cider
1 dash Peychaud's or other Creole-style bitters optional
× 1 1 serving

How to make:

  1. Select and pre-chill a Collins glass.
  2. Prepare garnish of pear wedge.
  3. POUR all ingredients into a chilled glass.
  4. Carefully lower ice into the glass to fill to the rim.
  5. Garnish with a pear wedge.

Review:

In keeping with the French origins of this cocktail, I used Belle de Brillet liqueur and Galipette brut cider when I first tried it, and it was delicious. Simple as that. However, I like to add a dash of Creole bitters, but this is an optional embellishment.

The Galipette brut cider I had, but my pear liqueur was the Gifford (25% abv) which I have found consistently underwhelming. I exchanged 5ml of that for Massenez Poire William eau-de-vie (40% abv) which brought the drink to life, lifting and opening it out.
I'll probably be buying the Belle de Brillet next, but this gives me something delicious to do with the remains of the Giffard Poire liqueur.
(btw: I calculate the drink as printed as 1.5 units, not 2.1)

Selflessly (selflessly, I tell you) testing and retesting small variations on this most excellent summer afternoon cocktail, I can finally report that:
the dash of creole bitters is vital // the swapping out of 5ml of (even) the very tasty Belle de Brillet pear liqueur for 5ml of the Massenez Poire William eau-de-vie still lifts this drink to another level // increasing the bitters and/or the eau-de-vie do not improve the drink // if you need one (or two) quickly, rinse the ice cubes to smooth the surface to reduce fizzing and making the cider go flat.

Very easy to make and tastes excellent. Nice to have a 3-ingredient Belle de Brillet cocktail too. Made it with homebrew dry cider and one bottle making four of these was very handy!
