1 dash | Peychaud's or other Creole-style bitters optional |
In keeping with the French origins of this cocktail, I used Belle de Brillet liqueur and Galipette brut cider when I first tried it, and it was delicious. Simple as that. However, I like to add a dash of Creole bitters, but this is an optional embellishment.
This is a cocktail promoted by our friends at Rémy Cointreau as the "Belle Sparkling Apple Cider."

I'll probably be buying the Belle de Brillet next, but this gives me something delicious to do with the remains of the Giffard Poire liqueur.
(btw: I calculate the drink as printed as 1.5 units, not 2.1)
the dash of creole bitters is vital // the swapping out of 5ml of (even) the very tasty Belle de Brillet pear liqueur for 5ml of the Massenez Poire William eau-de-vie still lifts this drink to another level // increasing the bitters and/or the eau-de-vie do not improve the drink // if you need one (or two) quickly, rinse the ice cubes to smooth the surface to reduce fizzing and making the cider go flat.
