¹⁄₂ fl oz	Calvados / apple brandy / straight applejack
¹⁄₂ fl oz	Belle de Brillet pear liqueur
³⁄₄ fl oz	Pear juice (freshly pressed)
¹⁄₆ fl oz	Lemon juice (freshly squeezed)
3 drop	Vanilla bitters (optional)
2 drop	Saline solution (20g sea salt to 80g water) or merest pinch of s (optional)
³⁄₄ fl oz	Fiol Extra Dry Prosecco (chilled)

Prepare

Select and pre-chill a COUPE GLASS.
Prepare garnish of pear wedge.

Method

SHAKE first 7 ingredients with ice.
FINE STRAIN into chilled glass.
TOP with sparkling wine.

Garnish

Garnish with pear wedge on rim.
