Serve in a Martini glass

Ingredients:
1 wedge Watermelon (fresh)
2 oz Ketel One Vodka
14 oz Strucchi Red Bitter (Campari-style liqueur)
12 oz Lemon juice (freshly squeezed)
23 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
2 dash Orange Bitters by Angostura
× 1 1 serving

How to make:

  1. Select and pre-chill a Martini glass.
  2. Prepare garnish of watermelon slice.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.

Review:

Light, refreshing and all too quaffable. Bitter liqueur and orange bitters add depth of flavour. And, with a full 20ml of sugar, surprisingly balanced.

I love this cocktail. I used a 1/16 wedge as specified in other cocktails that use fresh watermelon. I muddled it before adding the rest of the ingredients. I've made it twice now and each time I've forgotten to add the orange bitters. Oh dear, I'll just have to make it again... (Miami Martini)

Great use of spare watermelon but ideally should add some more precise measurement to the fruit.
