| 1 oz | Hayman's Old Tom Gin |
| 2⁄3 oz | White crème de cacao liqueur |
| 2⁄3 oz | Blanc quinquina/kina (e.g. Mattei Cap Corse, Bonal or Kina L'Aér |
| 2⁄3 oz | Lemon juice (freshly squeezed) |
| 1⁄3 oz | Aniseed (anise) liqueur |
| 1⁄3 oz | Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative |
| 3 drop | Saline solution 4:1 (20g sea salt to 80g water) |
How to make:
- Select and pre-chill a Coupe glass.
- Prepare garnish of lemon zest twist.
- SHAKE all ingredients with ice and strain back into shaker.
- DRY SHAKE (without ice) to emulsify.
- FINE STRAIN into chilled glass.
- EXPRESS lemon zest twist over the cocktail and use as garnish.
