Ingredients:
1 oz Hayman's Old Tom Gin
23 oz Dutch Cacao white crème de cacao
23 oz Blanc quinquina/kina (e.g. Mattei Cap Corse, Bonal or Kina L'Aér
23 oz Lemon juice (freshly squeezed)
13 oz Aniseed (anise) liqueur
13 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
3 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lemon zest twist.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice) to emulsify.
  5. FINE STRAIN into chilled glass.
  6. EXPRESS lemon zest twist over the cocktail and use as garnish.
