Ingredients:
2 oz Gold rum (1-3 years old pot & column blend)
12 oz Ginger syrup (equal parts ginger juice to caster sugar by weight
12 oz Pineapple juice
12 oz Lime juice (freshly squeezed)
2 dash Angostura Aromatic Bitters
1 oz Thomas Henry Soda Water chilled

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of pineapple wedge skewered with crystalised ginger.
  3. SHAKE first 5 ingredients with ice.
  4. STRAIN into ice-filled glass whilst also pouring soda.
  5. Garnish with pineapple wedge on rim skewered with crystalised ginger.

Great stuff, I'd put a little bit of sugar syrup still..maybe my ginger syrup wasn't sweet enough
