Ingredients:
1 12 fl oz Agricole blanc/cane juice rhum (unaged)
34 fl oz Lime juice (freshly squeezed)
12 fl oz Sugar cane syrup (from juice)
12 fl oz Chilled water/mineral water omit if using wet ice
6 drop Difford's Daiquiri Bitters
× 1 1 serving

Prepare:

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of lime wedge.

How to make:

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish:

  1. Garnish with lime wedge on rim.

Review:

Rhum agricole's distinctive grassy notes shine in this Daiquiri. Dilution is key to a great Daiquiri, particularly in this case, as formulated with a 50% (100 proof) rhum agricole and sugar cane juice syrup. If using a 40% agricole and/or standard sugar syrup, or indeed wet ice, then reduce or omit the added water accordingly.

Being big drinkers of Rhum Agricole not sure why it took us so long to try this cocktail. It was unbelievably good. Being that we like our drink on the dry side, we use Clement Creole Shrub instead of the sirop de canne. Resulting in less sweetness and a mild hint of orange. Wonderful cocktail. Will definitely do again.

There was once a world before Daiquiri bitters and this is the world wherein I live. This drink was pleasant but would it - and my world - be transformed with the addition of these bitters?

I love a (Bacardi limited edition) Daiquiri but have been struggling to get the right balance for my 50% Husk pure cane agricole. These proportions of lime and sugar syrup balance it out nicely!!
