Ingredients:
1 23 oz Lustau Manzanilla Papirusa Sherry
12 oz Strucchi Dry Vermouth
12 oz Lemon juice (freshly squeezed)
13 oz Raspberry (framboise) sugar syrup
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of fresh raspberry.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice) to emulsify.
  5. FINE STRAIN into chilled glass.
  6. Garnish with raspberry floated in centre of cocktail.

Review:

This riff on the classic Clover Club strips out the botanical-laced gin and replaces it with bone dry fainty salty sherry. The result is lighter, more refreshing and suited to the aperitivo moment, yet enjoyable as a late-night refresher.
