1 3/4 fl oz Cognac (brandy)
1/2 fl oz Luxardo Maraschino liqueur
2/3 fl oz Pineapple juice (chilled)
2 dash Peychaud's or other Creole-style bitters
2/3 fl oz Brut champagne/sparkling wine (chilled)

How to make

Serve in a Coupe glass

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of pineapple wedge and Luxardo Maraschino Cherry.

Method

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish

  1. Garnish with pineapple wedge on rim skewered with maraschino cherry.

History

The "Club" cocktail first appears in W.C. Whitfield's 1939 book Just Cocktails as the third of three cocktails with the same name, two on page 27, with the second distinguished by "New England Style" appearing after the name in brackets; and this third version on page 48 in the "Cocktails of the 'Gay Nineties'" section. (Interestingly, there is not one Club cocktail in his 1941 book Here's How Mixed Drinks by the same Three Mountaineers Inc. publishers.)

3 dashes Rum
3 dashes Orange Bitters
1 dash Green Chartreuse

CLUB (NEW ENGLAND STYLE)
2/3 Dy Gin
1/3 Italian Vermouth
Serve with an olive.

CLUB
3/4 jigger Old Brandy
2 dashes Maraschino
2 dashes Pineapple juice
2 dashes Bitters
Mix with ice and strain, dress with strawberries and twist of lemon peel, add a dash of champagne.

I’ve just updated this recipe again. For the record, this was the previous version:
60 ml Cognac (brandy)
15 ml Maraschino liqueur
20 ml Pineapple juice
2 dash Creole-style bitters

I tweaked towards Difford’s version by increasing the pineapple juice to just under an ounce. Excellent. Wouldn’t want less juice.

Agreed David. I've upped pineapple to 20ml so as not to move too far from the original spec. I miss the touch of pisco in my version. But I'm biased!
