Serve in a Coupe glass

Ingredients:
2 oz Rémy Martin V.S.O.P. cognac
12 oz Luxardo Maraschino liqueur
23 oz Pineapple juice
2 dash Peychaud's or other Creole-style bitters
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of pineapple wedge & Luxardo Maraschino Cherry.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.

Review:

Pineapple juice adds fruity tropical freshness and a foamy head to this cocktail. Fortified with cognac and aromatised with a splash of maraschino cherry liqueur and a couple of dashes of New Orleans bitters.

History:

The Club Cocktail first appeared in W.C. Whitfield's 1939 Just Cocktails book (although does not appear in his 1941 Here's How Mixed Drinks by the same Three Mountaineers Inc. publishers).

I tweaked towards Difford’s version by increasing the pineapple juice to just under an ounce. Excellent. Wouldn’t want less juice.

Agreed David. I've upped pineapple to 20ml so as not to move too far from the original spec. I miss the touch of pisco in my version. But I'm biased!
