History:
The Chilcano de Pisco is a traditional Peruvian way of serving pisco. Its name should not be confused with the Peruvian fish soup, Chilcano de Pescado, although the drink derived its name from the dish due to the similarity in hue thanks to the colouring effect of the aromatic bitters.
