| 1⁄12 oz | Gentian liqueur (e.g. Suze, Salers etc) |
Orange, peach and cinnamon delicately flavour this mezcal-based Margarita riff.
Created in February 2015 by Mike Shain and Nicholas Bennett at Porchlight in New York City. At Porchlight, the original is made with house-made cinnamon syrup infused with gentian root to add a slight bitterness. Instead, I've added a little gentian liqueur to the above recipe.

Added a little Suze, gentian liqueur, which added not only a pleasant bitter dimension, but also changed the colour towards the turquoise/aqua spectrum, as Suze is yellow.
It's genuinly made me less interested in trying other drinks because I kmow I can just make this and be delighted.
