Serve in a Coupe glass

Ingredients:
2 oz Oude genever
23 oz Orange Curaçao liqueur
13 oz Strucchi Red Bitter (Campari-style liqueur)
1 barspoon Agave syrup
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of orange zest twist.
  3. STIR all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. EXPRESS orange zest twist over the cocktail and use as garnish.

Review:

Your choice of genever and orange curaçao greatly effects the balance of this cocktail. Salvatore uses Rutte Old Simon which is not only a fantastic genever with an attractive nutty character but also befits the name. The choice of a drier, high alcohol curaçao obviously produces a correspondingly drier drink.

History:

Created in 2015 by Salvatore Calabrese at his bar in London's Playboy Club. Salvatore was inspired to make this drink both by the vintage 'Gin Cocktail' - perhaps the first ever gin cocktail - and Old Simon Rutte genever, which was being released across Europe at the time.

This one definitely improved with resting in the glass to allow a little more warmth and air to open the flavours. Very much in the historical modus for cocktails, plenty of flavour here. The Campari is almost too much for the delicate Old Simon botanicals.

I just made one and watching the video after, looks like he strains this into a coupe with a block of ice. I'm not sure the drink requires it but who am I to question Salvatore?

I'm not a fan of chunks of ice in a coupe. For me best either served on-the-rocks or straight-up. Hence, I took the liberty of tweaking Salvatore's serve.
