Serve in a Coupe glass

Ingredients:
2 13 oz Light white rum (charcoal-filtered 1-4 years old)
34 oz Lime juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
13 oz Chilled water omit if using wet ice
16 oz Kirschwasser (cherry) eau-de-vie
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lime wedge.
  3. SHAKE first 3 ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. FLOAT a spoon of kirsch eau-de-vie.
  6. Garnish with lime wedge on rim.

History:

This adaptation of a Natural Daiquiri was discovered by Joerg Meyer in 2011 in the 1948 edition of the Cuban Cantinero bartender's own journal, El Arte del Cantinero Los Vinos Y Los Licores.

Really nice - I love that the kirschwasser dominates the nose, but doesn't dominate the taste (but does complement the flavors of the daiquiri very well). A very nice variant.

Great - sugarcane notes and lime tartness play really well with kirsch's unique flavor. Recommend!

Is the intent to add the chilled water to the glass, or the shaker? Currently it's missed out of the recipe as only the first 3 and the kirsch are mentioned.

Yes, I believe the idea of adding the chilled water is for the kind of ice where it's so dry it sticks to your fingers when you take it out. I imagine refrigerator ice isn't like that.

When I use ice from the refrigerator ice maker is seems to melt faster than the ice I make for drinks, to get the cocktail chilled. I presume that using much harder (colder) ice would not reach the proper dilution. Unless you’re interested in shaking each drink for a few minutes each. At least that’s my best guess.

I'll call you Andy. Thanks for pointing out. I guess I reverted to the variation but I didn't leave myself a note to that effect. I've removed duplicated recipe which was under variation.

The addition of water adds more dilution than just that imparted from just shaking other ingredients with ice.

Outstanding daiquiri. The correct amount of sweetness and the float make it perfect. Simple recipe, but so full of flavour. I think it is my favourite of all the daiquiris.
