Serve in a Sour or Martini/Coupette glass

Ingredients:
2 oz Ferro China Baliva
1 oz Lemon juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba (chickpea water) or Egg white replacement (vegan)

Prepare:

  1. Select and pre-chill a SOUR OR MARTINI/COUPETTE GLASS.
  2. Prepare garnish of lemon zest twist and aromatic bitters.

How to make:

  1. SHAKE all ingredients with ice and strain back into shaker.
  2. DRY SHAKE (without ice) to emulsify.
  3. FINE STRAIN into chilled glass.

Garnish:

  1. Express lemon zest twist over the cocktail and discard.
  2. Garnish with drops of aromatic bitters drawn through the foam.
