³⁄₄ fl oz	Lemon juice (freshly squeezed)
¹⁄₃ fl oz	Peach schnapps liqueur
¹⁄₄ fl oz	Giffard Crème de Pêche de Vigne liqueur
¹⁄₄ fl oz	Peach syrup
¹⁄₂ fl oz	Egg white (pasteurised) or 3 dash Fee Brothers Fee Foam cocktail foamer
6 drop	Lavender bitters (optional)
3 drop	Saline solution (20g sea salt to 80g water) or merest pinch of s

How to make

Glassware

Serve in a Sour or Martini/Coupette glass

Prepare

Select and pre-chill a SOUR OR MARTINI/COUPETTE GLASS.
Prepare garnish of lemon zest twist and peach wedge.

Method

SHAKE all ingredients with ice and strain back into shaker.
DRY SHAKE (without ice) to emulsify.
FINE STRAIN into chilled glass.

Garnish

EXPRESS lemon zest twist over the cocktail and discard.
Garnish with peach wedge on rim.
