*1* Yerba mate and rooibos sugar syrup
SHAKE all ingredients with ice and fine strain into chilled glass.
1 1/3 fl oz | Heering Cherry Liqueur |
1 fl oz | Cachaça |
1/3 fl oz | Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix) |
1/3 fl oz | Lime juice (freshly squeezed) |
1 whole | Pasteurised egg white or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer |
