1 2/3 fl oz Light white rum (charcoal-filtered 1-4 years old)
5/6 fl oz Lemon juice (freshly squeezed)
2/3 fl oz Pomegranate juice
1/2 fl oz Monin Almond (Orgeat) Syrup
1/6 fl oz Egg white (pasteurised) or Fee Brothers Fee Foam cocktail foamer

How to make

Glassware

Serve in a Flute glass

Prepare

  1. Select and pre-chill a FLUTE GLASS.
  2. Prepare garnish of rose water in atomizer.

Method

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish

  1. Garnish with a mist of rose water sprayed over cocktail.

History

Irish Bacardí Legacy 2016 winning cocktail by Will Lynch of The Exchequer, Dublin.

My inspiration is the famous Bacardí poster from the early 1940s, depicting a young elegant Rumba dancer in her rich red flamenco-style dress; this poster for me is a snapshot of a time in Cuba, a time of fun, passion with a hint of romance. My cocktail is not only a symbol of this time but also a symbol of the Irish Bartending community spirit. Rumbera is a delicate and floral cocktail, perfected with the support of friends and family; inspired by the Bacardi family members with their passion for the Cuban lifestyle, music and community.

Review

This is a crowd-pleasing cocktail - fruity and just a tad on the sweet side, with pomegranate and rich almond biscotti-like flavours dominating.

What a wonderful cocktail. Used Jerry Sungold's adjusted recipe and used a few fresh strawberries as a garnish. As we are big rum drinkers, added a small float of 151 rum. Outstanding.

A great cocktail. Here are my ratios (I like to keep it simple):
2 White Rum (Plantation/Plantaray)
1 Pomegranate Juice (POM brand)
3/4 Lemon Juice
3/4 Orgeat
1/2 Egg white

Thanks for the suggestion. We followed your measurements, and added some fresh strawberries in the glass with a 151 Rum float. Wonderful.

This is an incredible cocktail. Arguably my favorite that uses either pomegranate juice or orgeat. The combination and balance of each here is sublime and surprising. The orgeat (Giffard) is most definitely present, near front and center, but not too sweet. I opted to add 3 drops of rose water into the shake. This drink looks and tastes fantastic, but I can certainly understand it's not for everyone. (7 Jul 2023, 3:58p)

Delicious and pleasantly sour. I couldn't really detect the orgeat beyond a general sweetness, but it probably contributed to the overall effect. Pomegranate juice is lovely stuff.
