How to make:
SHAKE all ingredients with ice and fine strain into chilled glass.

| 1/2 fl oz | Vanilla sugar syrup |
| 1/6 fl oz | Framboise/raspberry eau-de-vie |
| 1/6 fl oz | Pasteurised egg white or Aquafaba (chickpea water) or Cocktail foamer (foaming agent) |

For me, Cuba is the enchanted isle. I took my inspiration from Cuba in the 1920s when Americans were invited to visit as. In particular, high society circles came over and this had a knock-on effect on society in general. It was also a time when more ladies were entering bars, which drove the trend for a more delicately balanced drink.
