I used juice from canned pineapples and frozen mint leaves. Very nice without double straining, small flakes of mint still giving flavor and texture in the drink.

Wish my pineapples were better. I can see the potential, with mint and maple coming to the fore.

Remade it with much nicer pineapple juice, and wow, it is really good. A great after meal drink, and the maple and the mint are so good with the pineapple, with the mint and rum also preventing the drink from being cloying.

This does seem promising. On a quest to find a fresh ripe pineapple.
