How to make:
MUDDLE banana with rum in base of shaker. Add other ingredients, SHAKE with ice and fine strain into chilled glass.
|3 slice||Banana (preferably overripe)|
|1 2/3 fl oz||Light white rum (charcoal-filtered 1-4 years old)|
|1/2 fl oz||Dry vermouth|
|1/2 fl oz||Lime juice (freshly squeezed)|
|1/3 fl oz||Sugar syrup 'rich' (2 sugar to 1 water, 65.0°brix)|
|1/12 fl oz||Ricard Pastis|
|1/3 fl oz||Chilled water (omit if using wet ice)|

Fresh and enlivening. This banana cocktail is a delight and makes for a great and most unusual aperitivo. Be sure your bananas are ripe/overripe - you'll be surprised how much flavour just three slices contribute, not to mention how much they clog your strainers.
Adapted from a recipe created for Bacardí Legacy 2017 by Nicolas Munoz at Bespoke Cocktail Bar in Paris, France. The original recipe: 3 slices ripe banana, 60ml Bacardí Carta Blanca rum, 15ml Noilly Prat Original Dry, 20ml lime juice, 7.5ml sugar syrup, and 1 spoon pastis.

What better than bananas to symbolize this - served in a coupette, a glass historically associated not only with parties and fun, but also with quality and class.
