Ingredients
1 inch	Cucumber (fresh) (chopped)
1 ¹⁄₂ fl oz	Blanco tequila
³⁄₄ fl oz	Cointreau L'Unique triple sec liqueur
³⁄₄ fl oz	Lime juice (freshly squeezed)
¹⁄₆ fl oz	Agave syrup (agave nectar)
4 drop	Coriander bitters
3 drop	Saline solution (20g sea salt to 80g water) or pinch of salt

How to make

Prepare

Select and pre-chill a COUPE GLASS.
Prepare garnish of skewered cucumber ribbon.

Method

MUDDLE cucumber in base of shaker. (Ideally, cut skin from the cucumber log before chopping).
Add other ingredients and SHAKE with ice.
FINE STRAIN into chilled glass.

A classic Margarita freshened by the addition of cucumber. (Coriander bitters add depth of flavour and balance if you have them.) I tried this served over ice in an old-fashioned, but it's better served straight up.

Another to add to our ever lengthening list of favourite Margaritas. Bravo to our good host. But we have a challenge for him also. With all of the vegetables that are these days climbing their way into our cocktails, where are the humble potato and the noble leek? So perhaps our host might find a way to conjure up a Cawl Cennin or French Fries Martini. Just a thought.
