1 12 oz Bacardi 8 year old rum
1 oz Stout beer
13 oz Galliano Espresso Coffee liqueur
13 oz Lustau San Emilio Pedro Ximénez Sherry
4 dash Xocolatl mole bitters
× 1 1 serving

How to make:

  1. Select and pre-chill a Nick & Nora glass.
  2. Prepare garnish of mint leaf.
  3. THROW all ingredients with ice.
  4. STRAIN into chilled glass.
  5. Garnish with mint leaf.

Irish Bacardí Legacy 2018 winning cocktail by Tony Barry at Cask in Cork, Ireland.

A 'hug from Mary' is a hospitality ritual among the bartenders of Cork. Mary is owner, bartender & host of the oldest family pub in Cork - The Castle Inn. The Castle has no television, Wi-Fi or phones; the only noise you can hear is chatting amongst friends. When you are served a cold drink by Mary it is the perfect welcome. I also grew up working in a family pub and understand the importance of tradition. My Hug from Mary cocktail reflects flavours found in any Irish bar, my bartending career, a salute to Irish bartenders and, of course, Mary!

I used a craft RIS in this recipe and found I liked it more when I went heavy with it (doubled to 2oz). I happened to quite like the PX in the mix, and felt the overall became a nice pseudo coffee imperial stout.

Trash at the prescribed specs. I reduced the PX by half... El Dorado 8, Guinness FX Stout, Luxardo Espresso, Ango cocoa bitters... This had potential, but it begs for a salty, malty infusion. (19 Jan 2024, 3:20p)

This is lovely- it really is a much needed hug. I used black rum instead of the 8 year old and it’s lovely and toffee flavoured in a grown up way
