How to make:

SHAKE first 4 ingredients with ice and strain into ice-filled glass (preferably over a chunk of block ice). TOP with tonic.

Special ingredient #1: Homemade sage syrup

2 fl oz Caorunn Gin
1 fl oz Pressed apple juice
34 fl oz Freshly squeezed lemon juice
12 fl oz *Special ingredient #1 (see above)
2 fl oz Mediterranean tonic water
