Some sort of nice flavors going on but, between the Ceylon cinnamon, Siete Misterios, and Salers, there's just a strange inflection to its bitterness and mouth feel. I'm not sure the demerara is appropriate either. Why not use agave? And I'm feeling like a proper half sour pickle is preferable over straight cukes.

Yes! Two Ba-Tampte half sour slices (some garlic and dill infusion) and one English cuke slice worked out lovely and the agave sub (5 ml) was what this needed. Now I could drink a few of those.
