Coupe glass
Ingredients:
1 1/2 fl oz Bison grass vodka
2/3 fl oz Lemon juice (freshly squeezed)
1/2 fl oz Monin Passion Fruit Syrup
1/2 fl oz Apple juice/apple cider (cloudy & unsweetened)
1/6 fl oz Monin Pure Cane Syrup
1/2 fl oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
3 dash La Fée Parisienne absinthe

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of smouldering star anise.
  3. SHAKE all ingredients with ice.
  4. STRAIN back into shaker.
  5. DRY SHAKE (without ice) to emulsify.
  6. FINE STRAIN into chilled glass.

Aromatic and perfumed, bison grass, apple, sour lemon and rich passion fruit combine in this lightly sweet and fruity cocktail.

History:

Adapted from a recipe created by Robb Collins, Group Head Bartender at London Cocktail Club in London, England.

I created this in 2013 for the Monin 'Twist Your Classics' Competition, which I won. To this day I think it's the best drink I have ever created, so light and silky, yet amazing depth of flavour and definitely a drink you can have a few of.
