Sweet and sour with delicate bitterness and a complex cherry flavour, this cocktail is designed to pair with cheese.

History:

Created 2018 by Odd Strandbakken at Himkok, Oslo, Norway, this was the winning cocktail in the final of the Heering Classics competition. For the competition, Odd garnished this drink with olives stuffed with Kraftkar cheese, a spicy Norwegian blue cheese judged the Supreme Champion in 2016 World Cheese Awards. And as he says, this cocktail "perfectly pairs with cheese."

Subbed amontillado for the fino and Cynar for the Angostura Amaro. Wow this is something different, cherry, treacle and liquorice.

Any suggestions on garnish if you don’t have the cheese stuffed olive?
