Ingredients:
2 oz Martinique V.S.O.P rum
1 oz Amaro (e.g. Averna)
14 oz St. Elizabeth Allspice Dram liqueur
34 oz Lime juice (freshly squeezed)
14 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
1 12 oz Fiol Extra Dry Prosecco
× 1 1 serving

How to make:

SHAKE first 5 ingredients with ice and strain into ice-filled glass pre-charged with prosecco.

An absolutely fantastic aged agricole highball. The pinnacle of what a rum and coke should taste like, best achieved it turns out with an unorthodox rum (in my case, JM Terroir Volcanique) and no cola (but averna, allspice, and sparkling wine absolutely gets close).

Loved it. First sip was a surprise. The burst of flavours was a bit overwhelming. Sort of Italian Bitters meets the Caribbean. The herbal tastes of the amaro blend perfectly with the pimento dram. Use Barbancourt 8 year from Haiti. Perfect.

Just made this with Tempus Fugit Gran Classico bitter and rosé prosecco and the last of a bottle of Clement Select Barrel rhum, soon to be replaced to make more of these. Favorite prosecco cocktail.
