Serve in a Coupe glass

Ingredients:
1 12 oz Hayman's Old Tom Gin
23 oz Luxardo Apricot Albicocca Liqueur
14 oz Peach schnapps liqueur
12 oz Lime juice (freshly squeezed)
16 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
2 dash Peychaud's or other Creole-style bitters
2 drop Saline solution 4:1 (20g sea salt to 80g water)
14 oz Chilled water omit if using wet ice

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of Luxardo Maraschino Cherry.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with maraschino cherry.

Review:

This follows the classic gin and sour lime sweetened and flavoured by apricot brandy but with extra-fruity freshness courtesy of a splash of peach schnapps. Generous use of bitters keeps that fruitiness in check.

Loved the balance between the gin and the fruit flavours. Left out the sugar syrup and still found the cocktail a bit sweet. I would say it was more a "6" than a "7". Very refreshing.
While it is chilled and I see also serving this over a large block of ice to put in a little more water. It would be a wonderful sipper on a hot afternoon or evening.
