Serve in a Coupe glass
1 1⁄2 oz | Hayman's Old Tom Gin |
2⁄3 oz | Luxardo Apricot Albicocca Liqueur |
1⁄4 oz | Peach schnapps liqueur |
1⁄2 oz | Lime juice (freshly squeezed) |
1⁄6 oz | Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup) |
2 dash | Peychaud's or other Creole-style bitters |
2 drop | Saline solution 4:1 (20g sea salt to 80g water) |
1⁄4 oz | Chilled water omit if using wet ice |
This follows the classic gin and sour lime sweetened and flavoured by apricot brandy but with extra-fruity freshness courtesy of a splash of peach schnapps. Generous use of bitters keeps that fruitiness in check.

While it is chilled and I see also serving this over a large block of ice to put in a little more water. It would be a wonderful sipper on a hot afternoon or evening.
