I made this for Mum, and she enjoyed it. I used 40ml espresso because I had to work with what I had (espresso pods), and it didn't affect the drink too much.

Mum rated it five stars and said it's excellent but missing something... maybe coffee bitters?

Perhaps worth trying another espresso pod with more robusta coffee to add more bitterness/depth of flavour.

Bizarrely delicious.
Would never have thought pineapple and espresso would work so well. Made it with Stiggins Fancy and Mr Black. A rare case where a less intense coffee liquor might have worked better, but still inexplicably tastey with beautiful foam crema on top.

Made this without the pineapple juice (by accident) and found it quite enjoyable!
