Lemon zest twist
How to make:
STIR all ingredients with ice and strain into chilled glass.
|1 1/3 fl oz||Fino sherry|
|5/6 fl oz||St-Germain elderflower liqueur|
|1/6 fl oz||Lemon juice (freshly squeezed)|
|1 dash||Orange Bitters by Angostura|

Bone dry fino sherry mineral notes are enriched by elderflower and balanced by sour lemon.
Adapted from a recipe created in 2008 by Hayden Lambert at the Merchant Hotel in Belfast, Northern Ireland. A few weeks after creating this cocktail, Hayden entered it into a cocktail competition as the Pomp & Glory cocktail. Your choice of fino and the sourness of your lemons will dramatically influence this delicately balanced cocktail so you may need to adjust proportions accordingly.
Hayden's original recipe calls for:
35 ml Pennyweight fino
25 ml St Germain Elderflower liqueur
7.5 ml freshly squeezed lemon juice
1 dash orange bitters
