Ingredients:
1 23 oz Light gold rum (1-3 year old molasses column)
56 oz Pineapple juice
0.42 oz Lime juice (freshly squeezed)
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
16 oz Luxardo Maraschino liqueur
4 drop Difford's Daiquiri Bitters

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of pineapple wedge on rim & speared Luxardo Maraschino Cherry.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.

Review:

A Pineapple Daiquiri with an added something – a touch of flavoursome ash-aged maraschino liqueur. When garnishing the pineapple may be optional but the cherry is a must-have.

I did find this on the sweet side, but in a very good way. The tiny bit of cherry isn't obvious, but everything harmonizes extremely well.

Delightful. Like a tiki drink, but not as sweet. Would be perfect anytime, but especially on a warm, lazy afternoon.
