Serve in an Old-fashioned glass

Ingredients:
23 oz La Fée Parisienne absinthe
23 oz Apple Schnapps liqueur
1 12 oz Apple juice/apple cider (cloudy & unsweetened)
12 oz Lime juice (freshly squeezed)
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of apple wedge.
  3. SHAKE all ingredients with ice.
  4. STRAIN into glass filled with crushed ice.

I make this a little differently - 30ml absinthe, 45ml cloudy apple juice, 45 ml lemonade and 2 bar spoons of lemon juice. Drinks like something you’d enjoy on a sunny spring day in an English garden.

If you're using freshed pressed apple juice I recommend rolling rather than shaking to avoid the juice freezing

I'm just getting to like Absinthe in larger quantities in a cocktail. I went with 1/3 oz/10 ml Absinthe due to my palate tolerance and actually felt I could have gone with the full 2/3 oz/20 ml. A very nice cocktail. I think this will make a fantastic "fall" cocktail. Not overly sweet and the lime provides just enough sourness. Guess I'm starting to like Absinthe more and more :)

I made this with Luxardo sour green apple liquer. Not sure if the made a big difference- but what a drink. Simon- you must consider promoting this to 5-stars. Great drink!

Thanks, Jason. I've reduced the volume of each ingredient proportionally to better fit the glass and I've lifted the score to 4.5. Not quite 5-star but almost.

Very nice evening cocktail. The apple and absinthe go well together. Being a big lover of absinthe, I do feel some of the oomph was missing, but very delightful. I feel this is something which could be served to a novice absinthe drinker and they would like.
