Marc Pinotti, Marlowe

Marc Pinotti completed Hospitality studies in 2011 working in several restaurants. It should be mentioned that he worked at Lasarte Barcelona as Sommelier's assistant. In the summer of 2011, he started working at the Gimlet cocktail bar, in the heart of the Born neighborhood, which has been open since 1979 and specialized in classic cocktails.

After 7 years behind the bar, the family decided to manage the place, and after some slight reforms, opened it as Marlowe. The name is after a fictional private detective who popularized the Gimlet drink in Raymond Chandler's novels.

Inspired by the American cocktail bars of the 50s, a noir atmosphere and relaxed service. Classic in appearance but modern in spirit.

2.5 cl Lacto Fermented water of maresme tomatoes
2 cl Fino sherry
4 cl Rice sake from Delta del Ebro
Siurana oil top garnish
Saline drops
1 cl Organic oven toasted bread syrup
2 cl Italicus

Inspiration:
The cocktail that we propose is a version of a slice of bread with tomato. Low abv cocktail with umami notes and saline points.
