Alipús is a line of traditional Mezcals, made by different master distillers in their home villages according to local traditions. They use wooden vats for fermentation made from oak, cypress, pine and other woods. Their choice of stills is equally diverse.

Their artesian style of production also ensures the terroir leaves its trace in the spirit with factors such as soil, climate and other influences from the area where the agave used where grown also impacting the flavour of the mezcals produced. These Mezcals are not usually aged and have an alcohol content of 45% to 50% alc./vol..
