This pear and dragon fruit puree is a limited edition of just 3,000 aimed at the seasonal cocktail market. It is made using dragon fruits from Thailand and William pears from France’s Rhone Valley. Boiron add just 5% of sugar syrup with no colouring or preservatives meaning its 95% natural fruit.
Unlike other Boiron products, this puree is only available in their 480g squeeze bottle. Boiron sought to develop a dragon fruit puree due to its appearance and developed as a blend with pear due to the comparative lack of flavour in dragon fruit.
Boiron purées should be stored at -18°C and should be defrosted for 24-48 hours at a temperature between +2°C and +4°C. Once defrosted they should be stored in a refrigerator and used within five days.
