Akashi-Tai's Junmai Daiginjo Genshu is luxury sake brewed from Yamadanishiki rice milled to 38% (62% removed).

Made only in the mid-late winter months from the highest grade Yamadanishiki rice grown in Hyogo prefecture.

A brewmaster watches over the koji for 72 hours without sleeping to ensure the quality of this sake.

Όψη:

Crystal clear.

Μύτη:

Delicate and aromatic. Ripe pear skin, green apple, honeydew melon, white flower blossom, and acacia honey.

Στόμα:

Delicate, complex, generous, and yet restrained. Slightly sweet entry before drying with faint saltiness and flinty minerality. Ripe pear skin, papaya and crisp green apple with faint aniseed, white flower blossom, lychee, cut grass, sweet hay, and orange oils.

Ripe pear dries in the long finish with fades with delicately salty mineral notes.
