Today is Iceland’s National Day, commemorating Iceland’s independence from Denmark in 1944.

Icelanders will enjoy the day with parades (some of them headed by Iceland's stumpy little ponies) and by consuming a range of somewhat unusual traditional dishes that take in rotten shark, acid-cured seal flippers, sheep's heads and rams' testicles. They will also imbibe quite a lot of the national spirit, a clear, unsweetened schnapps called Brennivin (or Black Death).

We, on the other hand, have chosen to drink to Iceland and Icelanders with what we think of as a more civilised drink, a Dry Ice Martini.
