34 oz Lustau Manzanilla Papirusa Sherry
34 oz Giffard Poire William
34 oz Lemon juice (freshly squeezed)
14 oz Monin Almond (Orgeat) Syrup

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of skewered Fragata Green Olives.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with skewered olives.

Review:

History:

Adapted from a cocktail created by Tim McCarthy at Hawksmoor Guildhall, London. The Tom & Jerez remains one of the restaurant chain's "The Sacred Six", and we discovered it in 2025 at Hawksmoor Manchester, where it was promoted as "Spain in a glass."
