Garnish:

Orange marmalade-topped almond biscotti cookie

How to make:

Combine all ingredients in a shaker tin with 3 large 1 inch cubes of ice. Shake vigorously until the three cubes in the shaker sound like a spray can bottle. Strain into an egg-shaped stemless wine glass or fizz glass and serve with a side of orange marmalade and almond biscotti.

2 fl oz Hayman's Old Tom Gin
3/4 fl oz Lemon juice (freshly squeezed)
1 fresh Egg white
1/3 fl oz Extra virgin olive oil
1/24 fl oz Vanilla extract/essence
1/2 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
1/2 fl oz Earl Grey tea (cold)
